A New Project: A Monthly Baking Challenge

In an effort to get more creative in the kitchen, I thought I would start a new fun challenge for myself and others to join in with. Each month I’m going to set an ingredient or theme and bake something in accordance with that. I’m hoping it will get me out of my comfort zone, start to use the many many cookbooks that I own and share some great recipes with people!

The idea is to post recipes during the month in line with the theme or the ingredient. You can create as many recipes as you want during the month and at the end, I will share my favourites (tag me on Instagram or Twitter and use the hashtag #OneMoreSliceChallenge)

For the month of March, I have picked Rhubarb as the ingredient. Only ever making a rhubarb crumble before, rhubarb is an ingredient that is relatively foreign to me – so I thought what better way is there to get familiar with it! Rhubarb is in season from February to May and is a wonderful ingredient to signal the start of spring.

If you wanted to have some inspiration for what to bake with rhubarb, here are some recipes to get you started…

Rhubarb works great in cakes. Izzy’s rhubarb and almond cake looks beautiful or you could try a rhubarb and custard cake.

Try making some jams and condiments instead of traditional bakes. You could try some rhubarb and date chutney, rhubarb and vanilla jam or rhubarb and ginger jam.

Rhubarb also makes a great addition to a cocktail! This rhubarb & custard cocktail sounds divine, as does this strawberry & rhubarb gin and tonic.

If you fancy making a pie, make this rhubarb and apple pie or rhubarb and ginger pie. If you prefer crumble, this rhubarb and ginger crumble looks delicious.

For dessert, you could try this rhubarb sorbet, rhubarb and custard bread and butter pudding or this orange posset with poached rhubarb.
