Triple Chocolate Brownies

Triple chocolate brownies are a godsend for any occasion. Picnic, bake sale, Sunday night?! If you need to make something that is quick, effortless and absolutely delicious, these brownies are your friend.

I mean, I say quick – they are super quick to come together but you will have to wait for them to chill completely in the fridge before diving in for a slice.

I’m not judging you if you can’t wait, but they are *seriously* fudgy, so you’ll have sticky fingers if you tuck in straight away.

I have many *many* brownie recipes under my belt, but I think this one is my new go-to for its sheer simplicity and ease. The only trouble is, due to its relatively short cooking time (only 28 minutes) it means you have to wait for it to cool completely and then chill in the fridge before you can even attempt to cut it into squares. The wait is worth it though as you will be rewarded with thick, fudgy, gooey brownie slices – studded with triple chocolate chunks. Of course, this recipe is versatile – you can add chopped nuts and dried fruit, peanut butter, swirls of Nutella – the list is endless! 



  1. Preheat the oven to 180oc and grease and line a baking tin
  2. Whisk together the cooled melted butter, sugars and eggs until just combined
  3. Fold in the flour, cocoa and salt and finally the chopped chocolate. Fold until the chocolate is evenly distributed
  4. Bake for 28-30 minutes or until the brownie mixture has just set. This is a fudgy brownie recipe so it may still have a slight wobble. Leave to cool completely then place in the fridge to chill before cutting into squares.
